Mediterranean Layer Dip

Ingredients:

  • 1 cup Hummus (you can use more if you like)

Tzatziki Sauce Ingredients:

  • 1⁄2 c reduced fat sour cream
  • 1 large clove garlic microplaned or finely minced
  • 1 T fresh dill, minced
  • 1⁄2 t lemon zest
  • 1⁄4 t salt

Tomato Layer Ingredients:

  • 1⁄8 t cayenne pepper
  • 3⁄4 c diced tomato
  • 1⁄4 c diced Kalamata olives
  • 2 t evoo
  • salt and pepper

Cucumber Layer Ingredients:

  • 1⁄2 c crumbled feta
  • 3⁄4 c finely diced cucumber
  • 1⁄4 c finely diced red onion
  • 3⁄4 t dried dill
  1. Spread hummus on a platter, leaving room around the edge.
  2. Layer in order tomato mixture, the cucumber mixture and top with tzatziki sauce. Garnish with extra fresh dill. May be made a few hours ahead. If you make it too far in advance, it will weep. Serve with pita chips.

Baked Pita Chips

  1. Preheat oven to 375. Cut round pita bread into 8 pieces. Split the 8 pieces into two triangles (each round will give you 16 chips).
  2. Place on parchment covered half sheet pan (we kept the thin sides on one pan and thick on another so they would cook evenly). Brush smooth side of pita lightly with evoo. We seasoned ours with a mixture of granulated garlic, kosher salt, dried oregano, dried basil, and red pepper flakes - be creative! Add a little parmesan, too!! These crisp up very quickly - about 2-3 minutes.
